I ho ha fet amb un Kaitai \u2013especejament a la manera tradicional japonesa d&#8217;un exemplar de 150 quilos. Aquesta exhibici\u00f3 culin\u00e0ria es va celebrar el dilluns 13 de juny a l&#8217;escola de cuina de Paco Roncero i va comptar, a m\u00e9s, amb la pres\u00e8ncia d&#8217;un altre xef d&#8217;excepci\u00f3 enamorat de la tonyina Balfeg\u00f3; Ramon Freixa. L&#8217;objectiu d&#8217;aquesta iniciativa, fruit de l&#8217;acord adoptat fa un any per Balfeg\u00f3 i el MOM Culinary, \u00e9s promoure i impulsar la carrera acad\u00e8mica i professional de les dones al m\u00f3n de l&#8217;alta gastronomia i la restauraci\u00f3 per trencar la bretxa de g\u00e8nere existent a aquest col\u00b7lectiu, que forma part dels principis de la pol\u00edtica de persones de Balfeg\u00f3.<\/p>\n<p><strong>Degustaci\u00f3 amb maridatge<\/strong><\/p>\n<p>L&#8217;acord de col\u00b7laboraci\u00f3 entre el MOM Culinary i Balfeg\u00f3 ha fructificat a m\u00e9s a m\u00e9s en un intercanvi d&#8217;experi\u00e8ncies i coneixement, sempre amb la tonyina roja a l\u2019epicentre. Fa anys que l&#8217;empresa dedica recursos a la investigaci\u00f3 aplicada a la pr\u00e0ctica culin\u00e0ria, aix\u00ed com al descobriment de les parts m\u00e9s desconegudes de la tonyina roja i el seu aprofitament gastron\u00f2mic.<\/p>\n<p>Aquest kaitai coincideix amb l&#8217;inici de temporada del <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"https:\/\/tuna-tour.com\/ca\/\" target=\"_blank\" rel=\"noopener\"><strong>Tuna Tour<\/strong><\/a><\/span>, una activitat en qu\u00e8 els visitants, a trav\u00e9s d&#8217;una excursi\u00f3 en catamar\u00e0, poden nedar entre centenars de tonyines roges a les instal\u00b7lacions aq\u00fc\u00edcoles de Balfeg\u00f3, situades a dues milles i mitja de la costa de l&#8217;Ametlla de Mar.
