Balfegó together with the new MICHELIN Stars at the Gala España 2025

Balfegó, as the official partner of MICHELIN 2025, supported and helped celebrate this year’s Gala in Murcia, where the new MICHELIN 2025 Stars were awarded.

A year in which the world’s most renowned gastronomic guide awarded its Star to 32 new restaurants in Spain. The majority of these restaurants are located in Barcelona (Fishølogy, MAE Barcelona, Prodigi and Teatro kitchen & bar) and Madrid (Chispa Bistró, Gofio, Pabú, Sen Omakase and VelascoAbellà).

Also worth mentioning is the Star awarded to Sen Omakase in Madrid, owned by Chef Steven Wu, for his exceptional work and new opening in Madrid after his first project in Pamplona. This recognition follows his achievement in 2023, when he was named the best sushi chef in Spain by Itamae Balfegó.

This year, two other regions have also stood out. The Canary Islands, where we find renowned restaurants closely linked to the hotel sector, Donaire and Il Bocconcino by Royal Hideaway, both located in Adeje (Tenerife); Kamezí in Playa Blanca (Lanzarote) and Muxgo in Las Palmas de Gran Canaria (Gran Canaria) and also Aragón, a region in the province of Huesca that has received three distinctions (Ansils, in Anciles; La Era de los Nogales, in Sardas and Casa Arcas, in Villanova). Specifically, within this group, chef Toño Rodríguez from La Era de los Nogales restaurant in Sardas was the second winner of the CHEF BALFEGÓ award in its second edition.

We should also mention one of the new Stars, awarded to chef Aitor López at the Citrus del Tancat restaurant in Alcanar (Tarragona). He was also the second finalist of CHEF BALFEGÓ 2023, and is following the path of many of the contest winners who have since gone on to earn the prestigious Star.

With these 32 new winners, the total number of restaurants with a MICHELIN Star in Spain now stands at 242 establishments. This includes those that have renewed their distinction (in Soldeu, Andorra, another restaurant, Ibaya, has renewed its star).

A second Star has also been awarded to 3 restaurants, Alevante, Cocina y Alma, and Retiro da Costiña. This now shapes a map in Spain with 33 restaurants offering exceptional cuisine, which the MICHELIN Guide suggests are definitely worth visiting on any journey you take!

NACHO MANZANO 1

In the highest recognition category, the three MICHELIN Stars were awarded to Casa Marcial (Arriondas), led by Nacho and Esther Manzano and their dedicated team, bringing the total number of three-star establishments in Spain to 16.

Nine restaurants have been awarded the MICHELIN Green Star (Bistrot 1965 in Castelló d’Empuries, Cal Paradís in Vall d’Alba, DSTAgE in Madrid, Espacio Amunt in Ulldecona, La Boscana in Bellvís, O Secadeiro in Serra de Outes, Restaurante 1497 in Vallromanes, Taller Arzuaga in Quintanilla de Onésimo, and Tramo in Madrid). With these additions, 57 establishments are now considered by the Guide to be part of this prestigious classification.

With its two MICHELIN Stars, Chef Diego Guerrero was honored with the well-deserved Green Star at his always exciting DSTage restaurant.

In total, the 2025 selection of the MICHELIN España Guide was as follows:

  • 3 Stars: 16 Restaurants (1 new)
  • 2 Stars: 33 Restaurants (3 new)
  • 1 Star: 242 Restaurants (32 new)
  • Green Star: 57 Restaurants (9 new)
  • Bib Gourmand: 213 Restaurants (15 new)
  • Recommended: 747 Restaurants (85 new)

As in every edition, after the Star ceremony, it was time to enjoy the finest gastronomy, with Balfegó offering guests a variety of dishes made with different parts of Balfegó bluefin tuna.

The fame and prestige of Bluefin Tuna arrived in Murcia through the creations of the Balfegó sushi chefs, marking the end of another year of MICHELIN Stars awarded to restaurants all over Spain.
