Cristóbal Muñoz (Ambivium* – Peñafiel) will compete again in Chef Balfegó
Cristóbal Muñoz, from Restaurant Ambivium* (Peñafiel – Valladolid), who already won third place in CHEF BALFEGÓ in 2021, has been selected again as a finalist for the new 2024 edition that will take place in Madrid on October 28.
He began his studies at the Almeraya School of Hospitality in his native Almería, where he completed the Advanced Training Cycle in Kitchen Management and subsequently specialized in the Course in Haute Patisserie. In 2013, he was the winner of the first edition of the Le Cordon Bleu Madrid Promises in Haute Cuisine Award Competition, where in 2014 he obtained the Diploma in Cooking with Honorable Mention, a distinction he also received in 2015 in his Diploma in Patisserie, thus obtaining the Grand Diplome. His experience has been gained alongside chefs such as Dani García (Restaurante Calima), Paco Pérez (Restaurante Terra*) or Francis Paniego (Restaurante Tondeluna).
In 2021 he won the third Chef Balfegó award. He was Spain’s representative in the international edition of the 10th Copa de Jerez and in 2022 he won the Young Chef Award from the Michelin Guide and the Chef of the Year Competition at Alimentaria. At the Ambivium restaurant, where he is currently the chef, he has a Michelin Star and a Green Star.
Ambivium* experience is linked to the world of wine, where diners will experience various events that will allow them to discover the immense space and project of Alma Carraovejas. Its spectacular dining room and wine cellar are an incentive to travel to such an interesting land of vineyards.
Muñoz has a great knowledge of Balfegó bluefin tuna, which has been on his menu for all these years. In the international final competition he will bring two dishes that are on a par with his colleagues from Portugal, Italy, Germany, Benelux and Spain, where there is no shortage of MICHELIN Star representatives.
Cristóbal does not hide that he wants to reach first place in this edition, enjoying with his colleagues the experience in which he is already a veteran and will fight for the coveted first position. His experience, tenacity and professionalism have led him to be one of the 8 finalists who will compete on October 28 in Madrid to win the title in the VII edition of Chef Balfegó.
